Description In the canteen of Military University of Ground Forces in Vyškov were taken 13 kinds of main dishes. It was about seven kinds of meat dishes with a side dish, 3 kinds of vegetarian dishes with a side dish and 3 kinds of sweet meals. Chemical analysis was monitored quality of these meals. In dishes were determinate contain of toxic elements lead and cadmium and trace element zinc. The highest lead content was found in the report dishes fried cauliflower, french fries, tartar sauce (56.5 micrograms), the highest cadmium content was found in the report dishes yeast plum dumplings sprinkled with poppy seeds and sugar (14.6 micrograms). The largest source of zinc was investigated reports of dishes cooked beef, boiled potatoes, mixed vegetables (74.9 mg).
