Description Raw milk provides suitable conditions for the survival and growth of microorganisms. It is considered a risky food as a possible source of zoonotic agents. Raw milk can be bought directly on the farm or through vending machines. This milk can be bought directly on the farm or through vending machines. Our study focuses on the microbiological quality of raw cow's milk sold through five milk vending machines located in Brno and supplied by two farms. Analyses were done by the method of dilution, cultivation and colony counting. The results were statistically evaluated using the computer program Statistica, version 13.5. A total of 210 samples of raw cow's milk were analysed in the period from August 2017 to September 2021 and the aerobic plate count (APC) was monitored in the samples, which is an important indicator of the microbiological quality of raw milk. The APC determined in the samples taken ranged from 2.70 to 9.30 log cfu / ml. The limit for this microbiological criterion (300.000 CFU / ml, i.e. 5.48 log cfu / ml) specified in Regulation No. 853/2004, as amended, was exceeded in 100 samples (47.6%). In the case of raw milk, it is important to observe the temperature and storage time and to heat-treat the milk before consumption.
