Description Zinc is an essential trace mineral that has functions as part of about 300 different enzymes. As such, zinc plays a role in virtually all biochemical pathways and physiological processes (TALBOTT, 2003). Zinc associates with the hormone insulin in the pancreas, although it does not appear to play a direct role in insulin´s action. (LINDER, 1991;WHITNEY and ROLFES, 1993). Oysters are the richest source of zinc. Other foods high in zinc include red meat, poultry, shellfish, fortified breakfast cereals, whole grains, legumes, cooked greens, brewer´s yeast, and nuts (COLLINS, 2003). The evaluation of the 13 chosen sets of courses has been done in this research work. Sets have been taken from Military University of Ground Forces dinning hall in Vyškov. The trace elements were determined by chemical analysis (JUŘÍKOVÁ et al., 2004). In this paper is present only zinc content in these food. 1. Baked pork, dumpling and sauerkraut contain 3.0 mg of zinc. 2. Boiled beef boiled potatoes and mixed vegetables contain 4.6 mg of zinc. 3. Meat balls, potato purée and cucumber contain 2.2 mg of zinc. 4. Roasted pork, potato salad and tomato contain 2.8 mg of zinc. 5. Mince, boiled potatoes and sauerkraut contain 5.3 mg of zinc. 6. Beef goulash, pasta and plum compote contain 4.7 of zinc. 7. Baked chicken, rice and cucumber salad contain 2.3 mg of zinc. 8. Roasted cheese, French fries and Tartar sauce contain 0.4 mg of zinc. 9. Roasted cauliflower, French fries and Tartar sauce contain 1.0 mg of zinc. 10. Soya meat, rice and piquant sauce contain 5.2 mg of zinc. Term „soya meat“ is not allowed be used by ordinance No 329/1997 Collection of Laws [by virtue of public notice No. 329/1997 Collection of Laws (Public notice of Department of Agriculture, 1997)] and its substitute term „soya product“ – here is old title, that is used on menu. 11. Pancakes with strawberry jam contain 1.4 mg of zinc. 12. Yeast plum dumplings with poppy seeds and sugar contain 0.4 mg of zinc. 13. Buns with hot vanilla cream contain 1.9 mg of zinc (JUŘÍKOVÁ, 2002). Recommended dietary allowances (RDA) for zinc is 10 mg/day for adult men and women (VELÍŠEK, 2002), upper limit is for all 40 mg/day (COLLINS, 2003). All the ascertained foods have been under the limits. All food-sets were all right.
