Description | Wine contains approx. 200 different phenolic compounds (formally derived from phenol). Some of them has been named as biological oxidants because they inhibit potentially dangerous oxidation processes in cells. According to the chemical point of view these compounds are flavonoids, tanines or phytoalexines. The last five years speciall attention has been paid to the study of these compounds effect to human health. |
