Description Lager brewing yeasts are hybrid polyploid microorganisms. This characteristic causes problems in their identiffication, especially of technologically different species S. pastorianus and S. cerevisiae. Wine yeasts are mostly diploid and belong to the species S. cerevisiae and S. bayanus. In present work were analysed at least 40 brewing, 8 wine and 3 type yeast strains by PCR and RFLP methods. We choosed flocculating genes, gene HIS4, region ITS, RRL2 and YBR033w as target for differentiation. The growth at different temperatures (30, 37 a 40°C) were monitored. Unfortenately, the differences among genes do not often reflect the differences among species in hybrid industrial yeast strains. The identification and nomenclature of hybrid strains is still very complex and until now nonuniform.
