Description For thousands years, yeasts are used in processes of making fermented beverages and food. Nowadays, these technological yeasts belong to genus Saccharomyces. Many of them are hybrids and their characteristics are slightly different. We have focused on the characterization of technological yeasts strains (brewing, wine, baker‘s, distilling) and type yeasts strains using methods of molecular biology and biochemical methods. Then we compared them with each other.
