Description Although dietary catering only appeared in legislation in 2015, many canteens were already cooking diets before then, and in 2011 the chief hygienist even set conditions for heating dietary meals from home. However, the efforts to codify dietary catering in their early days produced a lot of confusion and half-truths, on the basis of which many canteens have now abandoned diets or are following unnecessary or overly strict measures. The only current methodology (the Ministry of Education's methodological recommendation) is based on legislation that is no longer valid and prescribes processes that have no further justification. The current legislation, on the other hand, is so benevolent that it ignores all aspects of dietary catering except recipes. Thus, there is a lack of comprehensive methodological material in the Czech Republic that would provide concrete guidance to all those who play a role in dietary catering (canteens, schools, providers, doctors, etc.). Within the framework of the We have it on our plate project, a methodological material is currently being developed which should cover how to cooperate with a dietitian, the practical implementation of food preparation, show the appropriate form of a medical report, provide sample documents (e.g. HACCP or agreement with parents on reheating) or clarify the issues of responsibility for the safety of the resulting food for the dietary consumer.
