Description The paper aimed to outline the characteristics and historical origins of the two most widespread species of brassica vegetables - cabbage (Brassica oleracea convar. capitata) and kale (Brassica oleracea). Describe the linguistic development of the names from Old Czech to the present, explain the etymological interpretation of the Czech names, their dialectal and folk forms and describe, at least briefly, with the help of examples of old Czech recipes, the ways of using cabbage and kale, especially in Old Czech and folk cuisine. The enclosed dialect map from the Czech Language Atlas served to complete the knowledge in the field of dialectology.
