Description Monitoring of the occurrence of Listeria monocytogenes throughout the food chain is one of the prerequisites to ensure of food safety. This article presents information about possibilities of contamination routes on dairy farms and dairy plants producing ripened cheeses. Typing of L. monocytogenes in raw materials, final products, the equipment and working surfaces of the production line, is critical for monitoring of contamination routes in primary production and food plants.
