Description The aim of the study was to obtain an approximate idea of the contamination of food products with microorganisms in the daily traffic of a large-capacity catering facility. The assessment of the microbial profile was carried out using selected microbial parameters, which were used as an indicator for assessing food products from a microbiological point of view. Most of the samples did not meet the prescribed criteria, and the food as a whole was rated as unsuitable or unhealthy. The methodology of microbial research is very difficult and time-consuming, and problematic in practice.
