Proposed project will be aimed to study 2 important genera - Bifidobacterium and Lactobacillus. These bacteria plae significant role in human nutrition, espetially as source of probiotics and in the possibility of utilisation on dairy industry. The selec ted strains will be study in detail, their biochemical, physiological and morphological characteristics will be described including the optimal conditions of cultivations and preservations. As well as the changes in their features during different usage in milk products will be studied. In many studies it was found that the classification of LAB is unsufficient and does not correspond to the real phylogentic relationships of different species and subspecies. Many molecular genetic methods were develope d in the world during last years and they were used for the characterisation of many industrially important species of bacteria and yeasts.
